I didnt have a gambrel 1 time so I cut off a hoe handle and put screws in it. Worked pretty good.

Be careful putting screws in a hoe it can having some lasting consequences

We made one out of rebar one time it worked for many of years.

I find it a bit easier skinning from head down, but quartering, just the opposite.
