I have one very similar to this. It was finished out with brass bolster and knob and a stag handle.
It is my favorite knife. I asked the guy to make me a knife for dressing and quartering deer. This is what I got. Best tool I ever had for the job. I will never get another stainless blade, the high carbon is so much better, albeit a lot more maintenance to keep it shiny.

I really like Battle Horse Knives. Carbon steel blades, all different shapes and styles and under $200. We bought 5 knives from them at Blade 2016 and they were really cool people.

Love to, but $200 would be pushing it on the low end for most custom makers...
I'm not necessarily looking for custom. It's just been so long since I bought a hunting knife and there are so many new companies out there...
