A lever action rifle would leave you a lot of room to have the engraving done.

I agree guys.. Choices choices choices.. Thanks for all the responses. At the moment the S&W 686 is in the lead. Classic style. Heirloom quality. Versatile caliber.
Someone said I should get something I always wanted but just wouldn't spend the money on. I always wanted a Colt Python but they are getting hard to find and not cheap if you do. The 686 would be a nice compromise.

Get ahold of Charles at Guns and Gear. He has been doing some nice display boxes and engraved guns together. Guns are useable and display able at the same time.

So I just went through this same delimma, except it was my brother, who graduated this year. He, like your son, had all the basics covered. I kicked around a few different rifles for him, and thought that I really wanted to get the right one. So I did some "investigating" and kinda hinted at different guns. He ended up with his M16 look-a-like this past weekend, and we had a serious blast! Pun intended! But I would suggest maybe just asking him, would you rather have x,y,or z, or just have a "private investigation" of your own. My brother was surprised either way (I think he caught on to my subtle questioning), and its been 72 hours and he still cant contain himself.

If you want something that's not found in everyone's gun safe, a S&W Model 41 comes to mind. A classic that will always be a classic.
