You can de-bone or buy boneless and make sliced. Smoke for about 4 hours and then chill. Slice it really thin on a slicer. It's some good eating.
What temp are you smoking that it takes 4 hours and what size?
I go by internal temp of about 195 degrees.

Smoke at 250. It's fully cooked but won't pull apart. You have to slice it thin. Having it fully chilled makes it pretty easy if you have a slicer. I started thinking about it and haven't done one like this in a long time. It's time I did one.
