Curious myself, tenderness, etc.,, with an 8 1/2 hour cook. I've been at 12-13 hours at 275 (uncalibrated) for 16lbs with a 3 hour rest in the Yeti.

cook it at 235-245 unti lit gets to 165 internal, wrap it up with alum. foil turn the heat up to 265 cook until 190 internal .
let it rest about 30 min.
