Spatchcock chicken

Got a hankering for some poultry and used olive oil and Montreal Steak Rub on a split, whole chicken. Cooked at 400° for about 1.5 hours. Soaked some ears of corn in water and roasted them for about 45 minutes. Chopped up some potatoes, onions, and carrots and tossed them with Italian dressing & sea salt (roasted for about 1.25 hours).

Wife decided to invite some friends at the last minute, so I threw on some Conecuh link sausage in case we ran low on food. Picture is poor, but the chicken was quite tasty!
