it's probably roof rats they are primarily seed and plant eaters Norway rats do get bigger but mostly eat meat...

roof rats will live in attic and patches of ivy and kudzu.. Norways will live in some of the same areas but mainly like crawls and basements and dark damp areas..

Not that this answers your question but, if you have a 55 gallon steel drum with top cut out tie to agree near the can throw some bait and and see what gets in and can't get out. That's likely your huckleberry.
