What's your favorite hot sauce?

I was genuinely surprised that Tabasco wasn't higher on the list.
I checked my inventory and I have 8 different kinds on hand but I admit my immediate go to is usually the Franks...I put that $%&# on everything.

Growing up Tabasco was pretty much it. I'm not exactly sure when "hot sauce" became a thing.
I'm sure a lot of it had to do with the influence of southwestern/Hispanic culture.

I traveled a lot when working, and the further from NM you got in the US the milder the hot sauce got.

In Ohio and Michigan hot salsa was like Heinz ketchup. On the other hand, every burger joint in NM served green chile cheeseburgers, even McDs and Wendy's and there were some local places in ALB that served the hot food the locals craved that would light your ass right up.
