I know how to lace and have done quite a few sets of 29" and 26" bicycle wheels. Youtube is your friend on everything you want to know, and then if the truing part becomes difficult, take it to a shop to fine tune.
Not sure if a local higher end bicycle shop can lace one for you, as I would assume they lace more wheels per month than a motorcycle shop?
I have seen it done a few times. I would suggest trying to do it yourself. The main reason for my suggestion is so when you have to pay someone to do it you will realize the value.
