58lbs of trimmed out goose meat. Made 23lbs of spicy italian, making 12lbs of jerky, and another 23lbs of bratwurst!

Is it like dark turkey meat? It looks amazing.
Nothing like a good goose breast marinated in Italian dressing cooked med rare on the grill!!! Should have saved them breast!!!
Reminds me more of deer meat although it has a distinct smell. I was concerned it might carry through into the flavor but that concern was laid to rest on the first bite.
I did save a little for something along those lines, but wanted more jerky and sausage this time.
