And that why I have a Big Green Egg and a Webber Genesis gas grill. The Webber gets used 3 or 4 times per year. The Green Egg weekly. And, I'm a real man with a real job.
Made some of this tonight. Added a can of Rotel and seasoned the chicken with a little " Slap your Momma" Cajun seasoning. Used Andouile sausage as well as some Green Pepper smoked sausage. As Martha Stewart would say, it's a good thing.

This may be blasphemy to some but on the green egg I smoke the steaks ( mesquite ) with only one side having hot coals. I then move the steaks to the side with hot coals to sear and finish. I'm a medium rare kind of guy and I've not been disappointed yet with that technique.
