2024 garden thread

Had a long day at work yesterday, but still decided to get some canning done before hitting the sack. Got to the last two cans and ended falling asleep in front of the TV. Woke up at 3am to a glass explosion and the dog going nuts. Grabbed the appropriate tools for defending the homestead and charged out headlong to face the threat. I had left the burner on and the last jars of peppers and tomatoes exploded, showering the entire kitchen with glass, veggies, and all the associated juices. You’re not alone. I found out the hard way once when I removed the weighted “jiggler” from the top of a pressure cooker with chicken and dumplings inside. It’s amazing how much fits through that tiny little hole :shocked:

I finished up some fermented cayenne peppers and garlic today. I did a 5% brine for 33 days. It was 480 grams of peppers and garlic. I added one cup of white vinegar to finish the sauce after straining and blending the peps. Do any of y’all make ferments? I forgot to take a pic. The jars are in the fridge. Ph was at 4.5 the last time i checked a few weeks ago.
 
Not familiar with fermenting process. Is that the same process that Tabasco sauce is made with? I watched an episode of “How it’s Made” and it looked pretty simple from the couch
