Have a nice stick welder, might welder, now looking for a plasma cutter. I know zero about them. Any advice?

Don't think you can go wrong with Hypertherm. What's the thickest you'll need to cut?

Over the years I've had Esab,Miller,Lincoln & Hypertherm. Hypertherm is by far the best system for your $.
220 on a 50amp
I have the Hypertherm 30, wish I would of got the 45. I’m kind of in the same boat as you, cutting thickness wise, the 30 pretty much butchers 1/2” from my experience, which is not what you get plasma for. It works great for anything thinner.
Also check your compressor cfm rating and make sure you have enough air. You will need 5.5 cfm at 90 psi for most 30 amp units. I think 45/50 amp units are going to be around 7.0. A 30 gallon tank will be the absolute smallest you will want to use, 60 should be more acceptable, 80 good, and 120 two thumbs up.
