Butchering your own deer

Ive had a great rapport with Joe at Southers.
I always got my own deer when he worked there.
Things got a little weird there and it was no brainer to start using him once he started his own place at rock acres.

It’s even nicer now that he’s just starting out and it’s a smaller volume operation.
The attention to detail and quality is more obtainable and the place is brand new, fresh and clean.
He even has time to show me a few things since the volume is low.
He told me to come over any time and he will give me some tips and tricks on how the pros do things.
 
I never paid someone to process a deer till I moved to GA in '95. Before that I had never even heard of a deer processing service. Even then it was several years before I ever used one. Once I started though I got pretty lazy. I have been doing my own a litte more often recently just to stay in practice.
 
Helpful tip—— when cleaning if you have access to water
put water hose in cooler and let it fill and run over
put meat in cooler as you clean and cut
hair is hollow it will float and pour over top
I let mine run until I get back from throwing out guts
drain off water and ice it will be as clean as you can get it.
 
It takes a lot of time to process your own deer. But the return is a better product. The meat room in my barn on January 7th after a late season doe hunt and then some results 7 days later
