Do you deliver?I made 50lbs of sausage yesterday. Pepper Jack Brisket Fajita and Caramelized Onion/Beer.
So while I was working with Boston Butts, I threw one on the smoker for sliced pork today. The only things I should have done different is I should have thinned out or removed the fat cap and I probably should have deboned it first, but no biggie either way.
I normally take it up to 205° for pulled pork but honestly, sliced is easier and I think I like it better. The cook is so much shorter as well since it only needs to go to 180°. Wrap in foil and overnight in the fridge for easier slicing.
Needless to say, lunch is phenomenal.

Love it!!! I might have to look there and pick up anotherstarted out with these....EL cheapo's off eBay....talk about quick....almost the instant you put heat to them, they are ready....the cooking stops instantly as well...amazing!! nothing sticks either...rinse out with hot water and a sink brush....and good to go!!
