Duck eggs are excellent in baking as well. Although, it is entirely too hot to crank up the oven this time of year, duck eggs make baked goods rise higher and both denser and fluffier at the same time. It is impossible to explain how that is even possible, but it is.

My sister used to keep ducks, what you say is so true, everyone should try them, rich creamy deliciousness.
