Edelbrock carbs are made by Carter. I ran a Carter for over 100k miles. As long as they are built correctly and everything else is right they are ok for everyday driving with mild muscle.
If you run strong, yes Holley runs pretty good. Demons run good too.
The run rich part and mostly what you are describing sounds like a timing issue possibly. You need to get the cooling issue resolved quickly. Carb could be your problem too.
If you get rid of the Edelbrock card, i would like to have it if you chunk it….. I wish i could come help.
