I like 7.62x39 in AR15 for the ranges we hunt (most shots under 50 yards). However, any legal caliber will kill a deer with proper shot placement. What ever he shoots well should be his choice with hunting ammo.

Do you want him to develop a flinch? Because that's how you develop a flinch.I know what I’m gonna do, I’m gonna let him shoot my 12 gauge with 3.5 inch 2 1/4 oz turkey load. If he can handle that, he wont have any problems with any deer calibers.

Go the other way. Let him shoot the smallest you have and then work your way up. Remember that recoil management is a skill, so make sure his shooting form is good before you move him into bigger stuff.
