Need a Chili recipe

1 lb brown and drained ground beef
16 oz jar publix chunky salsa (hot or mild)
1 pack of chili seasoning . Players choice.
1 can o Beans again players choice.
simmer until hungry

It's just chili.
 
Ingredients

Meat-3lbs
Large Sweet onion -1
Large Red onion -1
Medium Jalapeno -1
Medium Banana pepper -2


I like "Bushes" brand but
Mixed Chili Beans in mild chili sauce-2
Black beans-1
Red kidney beans in mild chili sauce -1
Pintos with diced jalapenos -2

I like "Hunts" but
Fire Roasted Chunk tomatoes-2
Large tomatoe paste -1

Rotel Mild -1

3-packets of McCormick's Tex Mex chili seasoning

Ketchup
Mustard
Worcestershire sauce
Brown sugar
Cinnamon
Salt

Brown and scramble burger meat with hamburger seasoning (McCormick's) and Worcestershire sauce.

Drain grease off and set aside

Dice and slice onions, devein peppers and saute together in skillet until almost soft. Now add to skillet the Rotel. Simmer until soft. Set aside.

In a big pot, add browned meat, sauteed vegetables and add all the beans, paste and tomatoes. Stir well. Add Tex Mex seasoning. Simmer on medium low. Stir often for the first 15 minutes.

Add 1.5 cup ketchup. 1/2 cup yellow mustard, 3 tablespoons of Worcestershire sauce, 2 tablespoons of brown sugar, 1/4 tablespoon of cinnamon powder. Salt to taste. Stir in well.

Chilli is best to make early in the day and allow it to soak in for SEVERAL HOURS before serving. I like to cook at lunch, simmer with lid on low until good hot the turn off. When chill set in fridge until dinner then rewarm up slowly.

This will not be spicy. The jalapenos are mild and only allow for mild heat being deveined and seeds removed.

For more heat, increase to and use 4 jalapenos and do not toss the seeds out. Lay the seeds themselves on a cutting board and crush. Scrape crushed seeds into the pot and stir in well.
Plus instead of mild Rotel use HOT.
this looks like a good one !
 
Not ashamed to say it. Carroll Shelby Chili Kit makes some really good chili.
Will be using a box of that shortly, though I like it spicy and toss in a serrano while cooking and top it off with more minced serranos and onions. Oh, and always, always use a bottle of beer as part of the liquid, unless you're allergic to alcohol :-)
 
Roberts OTT Chili

4 cans chili starter

2 cans diced tomatoes do not drain

4 pounds ground beef

One pound hot breakfast sausage

One envelope chili seasoning

SPG and Honey Bacon

Mix the above into a big meatball.

Smoke indirect at 225-250 until IT of 160 (takes a little less than four hours.

Break it up onto the chili and stir. Cook for another hour. Best if refrigerated overnight then heated up.

This is the one I used before discovering Chili Magic. It makes a really good colorful chili.

Roberts OTT Chili



Two jalapeños deseeded and deveined then chopped

Two large onions

One green bell pepper

Two teaspoons of garlic

Sauté all the above in olive oil for about 15 minutes in the Dutch oven

Two cans whole tomato’s squish in your hand and pour into pot

Three cans bush’s chili beans not drained

2 cans Rotel diced tomatoes and green chili’s not drained

One can tomato paste

One and a half packs of McCormick chili seasoning



Do not Drain the beans and add all the above to the chili pot



Three pounds ground beef 80/20

One pound hot sausage

One and a half packs of McCormick chili seasoning



Mix the above into a big meatball.

It’s what I use, just add a can of stewed or crushed tomatoes and a can or two of kidney beans. I don’t use the included cayenne pepper so it’s not real spicy, my wife doesn’t like spicey chili. We made a batch last week using pulled pork instead of beef or venison and it was great!
