When I do ribs, after they’ve been smoking for a few hours, I put butter and honey all over aluminum foil and lay the ribs meat side down on the foil, wrap them tightly, then put them back on to finish. If I’m cooking for someone who doesn’t want them as sweet, I eliminate the honey.I always rub my ribs with mustard first then hit them with Byron’s Butt rub smoke an hour then wrap with butter smoke some more then unwrap and sauce and smoke some more they are fantastic. Doing them tomorrow as a matter of fact so I’ll post up
