Scotch before, good Cabernet during and a little afterwards then followed by a congac. Dessert and coffee

That looks really good. Somebody is on their game. I have recent discovered slow roasting after liberally salting and letting dry uncovered in the fridge the day before. Take Out 5 degrees before desired temp, cover in foil and rest for 1 hour. Never failed
