Inhereted several Case knifes, all are like new uncarried, and was wondering what's best to wipe these knives down with before putting then in safe.

Any quality light honing oil will work fine for that. Just be sure to wipe the handles clean and don't over oil if you have the original packaging. You don't want oil stains on the paper wrap or boxes. But don't worry about it too much. I have some old knives that I care a great deal about that haven't seen a drop of oil in years. I give them a quick once over every now again, and as long as they are indoors and not in a high humidity area they will be fine. The biggest thing can be to simply wipe the blades off if you have to put your fingers on them. I have a fingerprint rust spot on one old knife.
