this is a first for me, did it much the same as a pork loin. scored the top, slathered in mustard, some pork rub then over night in the fridg. Gonna smoke it about 190 for a couple of hours. We’ll see!

I remember staying at a friend's house would be out hunting all day come in starving to death. We would breakout the spam have an inch thick slice of spam in an inch thick slice of gubment cheese on two pieces of bread. Smoked would have made it doubly delicious.

That’s the exact same process for smoked cream cheese I plan on doing maybe this weekend
