I have tried it a couple of times and didn’t care for it, best I have found is crockpot, 2 cups beef stock, banana peppers and season with kinders all purpose let set on low for 8 to 12 hours

Fighting all those vertabrae and all the connective tissue just doesn't make it an ideal candidate for smoking in my opinion. It can be done be you better be a smoke master or it'll be tougher that whang leather.

Add some carrots and potatoes and you'll have a meal to remember.

crock pot, strain it, back in the pot with manwich and lathered on a bun

Not the best but I just throw in a bag of Cajun 13 bean soup and add water then a big chunk and cook it on low and start eating on it the next day
