Pickled okra. Mmmmmmm.
 
My wife made strawberry jam last week. Starting slowly, she made some pickles this evening.. Supposedly she has plums and blackberries for jam too..
 
Yesterday took some large Zucchini split them in half and removed the seeds. Placed on a baking sheet added virgin olive oil, fresh Oregano and Coarse Garlic and baked. While that was cooking fried up a White Egg plant given to me by a great member here, diced Egg plant skinless, Vidalia onion diced, and diced Pepperoni. Cook all down added Newmans Marinara. Stuffed Squash and topped with 3 cheese continued to bake...Yumm
 
fresh corn salsa today. went out to the garden got a couple of ears of corn, bunch of ripe tomatoes , jalapeno peppers. went to the green house got some fresh basil ,oregano,thyme and cilantro . peeled the tomatoes,corn , chopped up the jalapenos and other stuff added it to my crock-pot with some fresh garlic, black pepper, kosher salt and lime juice.cook for about 6 hours and jar it up.
