What options do I have in looking for a Manual SUV/crossover?

Yes they did, I don’t know if they still do or not. Toyota does on the Tacoma, but not on any of the SUV’s other than the FJ that hasn’t been made in awhile.
Find yourself a Mercedes E-class wagon. You can find them in the mid 30k range, comfortable and can easily seat 4 adults with room for cargo. Just stay away from the AMG package as even used they command close to or over 100k. Might be difficult finding a manual one as most came with 9 speed transmission.
Could find a Toyota 4Runner
Just find a nice low milage one.
The manual trans ones had the plain interior , but the leather seats and stuff from a Limited one are easy to swap in .
And swapping it from a automatic to a manual isn’t that hard . Any decent shade tree mechanic could do it .
I swapped one from a V6 gasoline automatic trans to a turbo diesel five speed manual , in my driveway .

You can still buy a stick-shift SUV, but the choices are extremely limited.
