What's going on the smoker/grill today?

Filet Mignon w/ family. Perfecrly cooked with a dab of garlic butter on top.

boneless ribs. picked up a pork shoulder,cut it into inch and a half slabs,marinated in apple juice over night,
added pink himalayan sea salt,and on it goes.
225 with hickory and apple smoke mix, gonna let it hit 190 to 200 so all the collagen breaks down and the apple juice caramelizes ... will add pics when its done....
