Yeah I wanted brisket, but I didn't want to buy a whole one just for the burgers. The days of a good real butcher shop are gone.Just chuck for me unless you want to grind some brisket. I don't care for bacon IN the burger. Now ON the burger, yes. That's the way God intended.

I use pasture raised/grass fed vacuum sealed ground beef. vacuum sealed ground wagyu is good too. Aint going back to that peasents fake mass produced dyed super market ground beef... Never ground my own though, i am a little lazy (2nd thought little would be giving myself too much credit..)
