Right off the top of my head:

AKM-- I like it a lot.

T33 Tokarev-- ditto, and I wish somebody would import a modified version with a good 1911 style safety lever, fast and easy to disengage, and good sights for fast combat shooting at less than 25 meters.

K-31 Swiss straight-pull bolt action -- very accurate and easy to cycle the action.
