Daily Dinner thread?

I bought some long Italian red peppers :eyebrows: at the market the other day.

Figured I'd make stuffed peppers but it turned into stuffed pepper casserole bc I had so much filling leftover lol.

Stuffing was ground beef, chopped onion, garlic, tomato, some of the red pepper, celery seeds, salt, pepper, oregano, cooked white rice, red pasta sauce and shredded cheese.

So I laid the stuffed peppers out, and then covered with filling everywhere, more shredded cheese and pasta sauce. I added chopped jalapeños over my portion. Into the 350° oven for about 50 minutes, and then more shredded cheese on top for an additional 10 minutes.

Mighty fine looks absolutely incredible. Had me at stuffed peppers and jalapeños. Guess it was good as it looks too.
 
Supper last night was BLT Wraps with tomato soup.
