Fixin' an American Poors' supper for tonight......

About once per year I'll buy a bag of Hurst's 15 Bean Soup dry pack and cook them after an overnight soak. 20 oz package for $3.00 anywhere (used to be a LOT cheaper, thanks Joe) and I use green onion tops (GF can't have regular onion), garlic, salt pork and in this pot I'm using some Conecuh smoked sausage I had in the frig. I may add 3 tbs of tomato paste at the end but haven't decided. Pan of corn bread and I'm eatin' a better supper than 75% of the world's population. America is where you want to be a poor.

i had never heard of that brand of sausage until they sent a cooler full to where I work.(the company I'm contracted to prints their boxes) After my share got ate up at home ,that's all I buy now. Good stuff! The cajun works well in perlo.

I cook this once a month once the weather cools off. Costco and Sam's both sell what they call "Carver Ham". I cut big bite sized pieces to cook with the beans. I've never thought about green onions instead of white or yellow. I'm going to try that. I can see where Conecuh sausage would be good in that. I use it when I cook a pot of fresh green beans and it adds awesome flavor. I'm going to try that too.

I did the cabbage almost like fuelman1 mentioned but I traded bacon fat for olive oil and used real garlic and salt. It turned out very nice. Al dente, if you will, as opposed to boiling it. It accompanied a roast pork tenderloin and red potatoes.

That Zoe’s (I think it’s Cava now) seasoning is awesome on broccoli. And on the fine China again!
