Do deer processors REALLY give you YOUR deer meat?

I always wondered myself. We seemed to get the same amount of meat every time, no matter what size deer we took. The clincher for me was when I took two good size does and received the same amount as when I took a small buck. We bought a grinder and never looked back.

Who did you use?
 
In the past I have been to shops that do a high volume of deer every season just give you a box of meat back that comes from what ever is there. It was to stream line the process is my best guess. Other small family operations I have been to only processed ONE deer at a time. I always specifically ask about this when I drop off my deer somewhere. With that said, I usually just process my own unless I really do not have the time to do it.
 
It's very common practice so you should definitely ask your processor if it's important to you. If they typically mix, they may be willing to do yours separate if you ask, possibly for additional charge.

It's standard practice with many fish and bird processors due to the huge volume and small carcasses. Fish processors weigh the catch and use a species-specific filet weight factor to determine what you receive.

Processors that cater to tourist or destination hunters do it a lot too. You turn in 20 birds and leave a few minutes later with 20 frozen birds in a cooler.
 
Some do some don't.

First hint would be size of meat you get back. You should get a small box with a small deer, and a large one for a large deer.

I definitely would rather get only my deer back. At least I know where its been.
 
There are alot of processors in my area, there are 2 that i will never take another deer to. One was a complete a-hole and the other i just wasn't happy with the finished results. There is one in Sylvania that we have used a few times and we have always been very happy with them. We often just swing by and have the clean and quarter the deer for us, they charge $17 and i dont mind. Last deer they did was a 175lb buck, when done with it we picked up 91lb of sausage and about 40lb of burger. Their sausage has been the best i have had yet amd ive had tons of sausage. Since i do hvac and refrigeration for a living, i snoop around their freezers and coolers looking for cleanliness and organization, i suggest everyone do the same. I also inspect their equipment to see how well they clean it.
 
As stated before some do and some dont. I usually request mine to hang for several days before being processed as most processors cut meat twice a week. I would find it hard to believe that any high volume processor does one deer at a time. A processor that I have used for many years says he does but when I go to pick up my deer and the door to the back room is open its a complete assembly line with about 7 guys processing meat.You dont really think that a processor fires up his smoker to do your 5 lb.s of sausage do you and keeps track of which sausage came from your deer.
 
Yeah, I just kept my order simple and asked if I would get MY deer, they said yes, but being a small deer It would not be a whole lot and it wasn't but it did last me pretty much until a month ago since we don't eat a lot of meat in my house, except for me.

I was very happy with they way it tasted and was packaged and they seemed to really take care of me, but I was really concerned about that stinking deer sitting outside and the pile,of ribs all stacked on top of one another.

Yeah the best way to know for sure is to do it yourself....just like anything else I guess.
