Do mine the same way. I've got a cubing machine, a grinder and a commercial vacuum sealer. Besides field dressing is the only way I can get the liver and heart. Damn good eating!
And I get way more meat off a deer than any processor I've found around here. Don't discount the shanks either they braise and slow cook deliciously!

how do you get the tenderloins without gutting?

You dont even have to cut a rib but IMO its easier gutting.

Field dressing means waste because dirty meat.

Not true. Cools the meat quicker. A quick hose out before hanging, processing or taking to a processor and G2G. IF done properly.

If you don't leave the meat on the bone until after it relaxes from rigor mortis you are eating tougher, denser meat than otherwise.

100%. Hanging in carcass form for awhile is best if the temp allows or if access to a cooler.

I hunt too close to the skinning pole to worry about field dressing
just take them up to the house and guts drop in the bucket
