the can goods i buy such as corn,peas, and green beans expire in approximately 3 years officially they probably last longer though unofficially

Can goods will last 5 years past "use by" date. Except acidic stuff like tomatoes & pineapples . They will only last 18 months past "use by" date.

What is wrong with dented cans?

They are fine for immediate use, but we are talking long-term storage.
A dent can crack the coating on the inside/outside of the can and provide a spot for rust to form.
