Need a Chili recipe

It’s what I use, just add a can of stewed or crushed tomatoes and a can or two of kidney beans. I don’t use the included cayenne pepper so it’s not real spicy, my wife doesn’t like spicey chili. We made a batch last week using pulled pork instead of beef or venison and it was great!
I brown the ground beef with onions add some Rotel and beans. The type of bean depends on my mood. Might be some kidney, maybe some black, maybe some pintos. Might be all 3. If my sister is eating I have to keep it on the mild side. If it's hunting camp it's going to get some jalapenos and make you sweat a little. I top my bowl off with Fritos, cheese, and diced onions. Now I'm craving chili. Maybe tomorrow night.
 
On a pound for pound ground beef / Italian sausage cooked on the flat top with onions, jalapeño, a bell pepper and 2 cloves minced garlic. Small can tomato paste, 1 large can fire roasted diced tomatoes, 1 can rotella hot, bushes chili beans in sauce, 2 tablespoons of smoked chili powder, 1/4 teaspoon ground cumin. 1/2 cup of your favorite bourbon ,all mixed together in a cast iron pot and on the RecTeq for about 2 1/2 -3 hrs. at 250*. Hickory pellets.
 
I go by taste and don't measure but it's something like this; 2lb venison, 1 lb ground Chuck, 1 lb old Mexican foods brand chorizo, brown add 3-4 Clove fresh garlic, 1 large onion. 1 jalapeno. I do not remove or strain fat at all. Then 1 large can of fire roasted tomatoes. Lots of ancho chili powder, cumin, smoked paprika, salt, black pepper. Beans if you want, I guess. and the secret, home made beef bone broth just enough to make it smoothly stirrable. You don't want anything swimming. Finish with fritos sour cream and cheese if you like

1 can10 oz original roteldo not discard juice
1 bagpearl onionfrozen
1.5 tablespoonchili powder
1/2 tablespoonwhite pepper
1/2 teaspoonfine ground red pepper
1/2 tablespoondried red chili pepperschopped
FRY MEAT
DRAIN
CRUMBLE
DUMP ALL INTO CROCK POT
LOW SETTING
3 HOURS
STIR EVERY FIFTEEN MINUTES
