23 hour brine in my "top secret" brine solution, followed by a cavity filling with onions, apples, and celery, followed by 14.5 hours of slow apple wood smoke creates this.

Who wants to come carve it? This is not for Christmas. My wife told me we aren't doing a turkey this year, and I was dying to try a turkey in my smoker, so this is just because....no other reason.
 
I am from New Mexico, so two years ago, I didn't even know what a smoker was. I bought my smoker 3 weeks ago, and in three weeks I have smoked 2 chickens, 2 butts, and now a turkey. This is the greatest piece of equipment in my home.
 
Looks good. I'm told that if you put the turkey in oiled cheesecloth that the skin will be brown but not dark like that. I'll be trying that Friday night. Sack it, coat in olive oil and see how it does.
