Garlic butter mix between skin and meat makes all the difference....

Looks good. I'm told that if you put the turkey in oiled cheesecloth that the skin will be brown but not dark like that. I'll be trying that Friday night. Sack it, coat in olive oil and see how it does.

But the skin tastes like bacon! Nom nom nom

I served one years ago for Thanksgiving. My Mother (who grew up in the Great Depression) stared at the bird for a few minutes then told me "Son I've ate some might poor Thanksgiving dinners, this is the first time that I've ever had to eat a black bird though!)

I have only had the smoker about 3 weeks, and thus far I have done 2 chickens (on different occasions) 2 butts (also on different occasions) and now the turkey. I bleeping love this thing. Ribs are next week when we run out of turkey.
