I've been smoking corned beef for years. I don't do the beer bath but I do a heavy coating of course black pepper. It's delicious.

Chuck roast with onions and mushrooms in gravy

with a side of carrots, parsnips and potato...

Tonight was serving bowl sized “killer salads”
Start with a bed of spring salad mix, then add
sliced carrots
sliced radish
sliced cucumber
chopped broccoli
chopped cauliflower
chopped hard-boiled egg
diced ham
shredded sharp cheddar cheese
dust with some McCormick salad toppings
toss on a handful of french fried onions
drown in Hidden Valley Ranch w/Bacon dressing
salt & pepper to taste
