Unfortunately I over smoked it. I tried a thinner piece around 3 hours in and it was great. I just thought I would leave it on for the thicker pieces. Mistake on my part. Taste real good just to dry and stiff. I will try again soon.
where did the goose come from? buy it or hunting? i'v never had goose but always wanted to try it. one of my neighbors is a damn yankee ( moved down here and stayed, just kidding, hes a really good guy) hes gets them from his brother that lives up north and hes says they are great.Put the goose in the smoker today after 2 days marinating. Hope it turns out as good as it smells.
