How do you prepare watermelon?

Anyone keep the rinds to make watermelon pickles?

We used to end up with a freezer full by October when I was growing up so my Mom could make them for Thanksgiving and Christmas.
3 2 1 method. 3 cups vinegar, 2 cups water, and 1 cup sugar. Put rinds in jar and boil everything and pour over rinds refrigerate and wait a couple days.
 
On a sidenote… We used to have watermelon roasts. This is where everybody pairs up with the one they love, around a campfire in the woods. A little drinking, a little snuggling. Then we put a watermelon in the campfire, and when it explodes everybody steps out in the woods and get‘s them a piece….
Similar to the donkey roasts I attended as a teenager.
 
Big wash tub, place the melon in the middle fill the tub full of ice, give it about 3 days submerged in the ice and take it out on a SATURDAY/ SUNDAY AFTERNOON, and cut it up however you like it and enjoy it.

Wife usually cuts up and puts it container. Growing up was always sliced and ate. I like thin slices where you can just hold and eat down to the rind. Never heard of pickled rinds
