Large game in SHTF

The thought occured to me today about what would I do with a deer if I didn't have electricty (ie. SHTF). What are some ways to keep a large amount of meat for a long period of time without a freezer?
 
Any good resources for learning how do this? I honestly don't have any experience. If there is a good book or website, i would love to read up on it.
 
Also, depends on the length of the SHTF situation.

I do know that deer and turkey were hunted to local extinction in GA after the civil war (they were re-introduced in the 40s, I believe.) There will be a lot of people shooting and eating whatever they can find-and it will go fast.

There were one hell of a lot people around back then.

Lots of folks will die off. No survival skills besides burger king.
 
I'm looking into raising rabbits and chickens. ALso reading up on aquaponics. Looks very intriguing. You use fish in a water reservoir to infuse fertilizing element into the water which the plants purify to recycle the water for the fish. By using tilapia you get edible fish while growing edible vegetables. Fish and salad in one ecosystem.
