Esee knives for the win. They have sizes and styles to match everyone's need. Their knives are full tang, great heat treat, carbon steel that is easy to sharpen and keep sharp. When I am looking to buy a knife, I always choose based on the steel used. I use my knives so I prefer a knife that is easier to sharpen and keep sharp in the field, which is why I prefer the carbon steel offerings.

I always trust a Kabar (Kabar style at least) Hard to beat an old beater like this one. Good enough to take to war back in the day, plenty good enough for any task today.
