Remove popcorn ceiling or skim coat it?

We bought a much larger home finally that's very nice but is original and built in 87'. Has crown molding but popcorn ceilings almost everywhere. Has anyone tried skim coating vs the really messy removal? As a stay at home parent right now I don't have the time or patience to do it so we will be paying someone.

EDIT:

the dining room is like the only room with no crown molding. I appreciate the positive comments about keeping it the way it is. The house is nice and was a real quality build. We just want certain things a little more updated. Gotta put our mark on it so to speak. The kitchen will have to be totally redone in the future too but we'll wait until our current house is sold.

Hire a painter to machine sand it with vacuum, sand and paint, Crown would look nice, In the old days we used to plastic off the floor and spray it with the garden hose , then use a mud knife to scrape it off as long as it was not painted,
