I'd do like others said and throw the drivetrain in a donor body if you can find one cheap enough. just like you said that drivetrain should be 500k capable if maintained correctly. You'd also be surprised what they can do on the secondary market, my buddy just got 6k out of his f350 (late 80's early 90's model) that had over 300k and was beat to ****. These 7.3's have cult status followers

Go by the local classic car restoration place and have them weld in a patch panel.

Sheetmetal work is not difficult if you are not trying to make a show truck.

Cut out the bad stuff and patch in with good metal. Weld, rivet, or sheetmetal screw in your patches, whatever you are used to using. Truck bodies are not structure, you have a full frame underneath for that.

Scab patch it, use some seamsealer, prime and paint, and it will look pretty good.

You will have to use just the cab and bed if you buy a gasser donor. The fuel system, cooling system, and tranny are different. If you try to put that motor in front of a gasser tranny, it will burn it up in short order.
