Will it function?

I'm bored and have almost enough parts in the bin to build an upper. Thinking about a 8 inch 300 blackout, for subsonic suppressed use. Will it function with a pistol length gas system, all else being equal?

Yes. I believe pistol length is the standard for 8" 300BLK barrels especially with subsonic ammo. I have a Seekins SR8 that is pistol length suppressed only and it runs like a champ with subsonic ammo.

from my research, most if not all length 300blackout barrels usually run pistol length gas tubes.. but especially if you plan to run subsonic and suppressed.

Gas block aligned correctly? Gas port have a burr from manufacturing? Gas tube clear?
