not all carbs have gluten, processed foods are the worst for hiding gluten. Anything made with wheat flour, or says "wheat" anywhere in the ingredients, contains gluten. You can have the bad genetics for gluten problems, and not suffer any serious problems for years, but if they get switched on, it can be a life or death situation. My symptoms are more subtle, but gluten can work on you for years before the real problems show up, such as colon cancer, heart disease, diabetes, etc.
