Picked a big one of these up and sliced it into ribeyes. Pulled one out of the freezer & going to do it in a few days when it’s thawed. Thanks for the heads up!
 
I picked up a 14 lb'er for Christmas and a 12 lb'er for slicing. They'll be some stuffed folks after Christmas dinner. After I assess freezer space I may go back for one or 2 smaller ones.
 
Ever try the 500 degree method? I did. It really works. IIRC it's something like preheating the oven to 500 degrees and then cook 5 minutes for each pound of meat. THEN you let it sit for 1-1/2 hours OVEN DOOR CLOSED and NEVER ONCE OPENED until done. All the rubbings, seasonings, etc. don't change.
That’s the only way we cook ours. Although we leave it in the oven closer to 3 hours. With lots of butter rubbed In with spices.
 
Here’s last night’s wife’s dinner. Unfortunately, she inherited her dad’s taste for ‘crispy edges’.

mine was muuuuch more rare.
Got 4 more steaks in the freezer, going back Monday for another roast or two, company coming in for a visit next weekend. Odd how when you move to the coast, you have record numbers of house guests.
